Siri Paye – Pakistani Dishes

Ingredients Of Siri Paye:

  • Cooking oil ¾ Cup
  • Mutton mix boti ½ kg
  • Tez paat (Bay leaves) 2
  • Badi elaichi (Black cardamom) 3
  • Darchini (Cinnamon sticks) 2
  • Laung (Cloves) 4-5
  • Sabut Kali Mirch (Black peppercorns) 1 tsp
  • Zeera (Cumin seeds) 1 tbs
  • Pyaz (Onion) sliced one large
  • Paya (Mutton trotters) ½ kg
  • Siri (Mutton head) 750 gms
  • Adrak lehsan paste (Ginger garlic paste) 3 tbs
  • Namak (Salt) 1 tbs or to taste
  • Dhania powder (Coriander powder) 2 tbs
  • Lal Mirch (Red chili) crushed one tsp
  • Kashmiri Lal Mirch (Kashmiri red chili) powder one tsp
  • Pani (Water) 1 liter or as required
  • Cooking oil 4-5 tbs
  • Tez paat (Bay leaves) 2
  • Zeera (Cumin seeds) 1 tsp
  • Badi elaichi (Black cardamom) 1
  • Laung (Cloves) 6-7
  • Darchini (Cinnamon sticks) 3
  • Adrak lehsan paste (Ginger garlic paste) 2 tbs
  • Pyaz (Onion) chopped one large
  • Dahi (Yogurt) whisked 2 Cups
  • Namak (Salt) ½ tsp or to taste
  • Lal Mirch powder (Red chili powder) 1 tsp or to taste
  • Kashmiri Lal Mirch (Kashmiri red chili) powder one tsp
  • Haldi powder (Turmeric powder) ½ tsp
  • Garam masala powder one tsp
  • Pani (Water) 2-3 Cups or as required
  • Adrak (Ginger) julienne
  • Hari Mirch (Green chilies) chopped
  • Hara dhania (Fresh coriander) chopped

Directions:

In the pot, add cooking oil, mutton mix boti and mix well until changes color and fry for 4-5 minutes then take out in a bowl.

Add bay leaves, black cardamom, cinnamon sticks, cloves, black peppercorns, cumin seeds and mix well.

Add onion and fry until light brown.

Add mutton trotters and mix well until changes color.

Add muttonhead and fry for 4-5 minutes.

Add ginger garlic paste, salt, coriander powder, red chili crushed, Kashmiri red chili powder and mix well for 4-5 minutes.

Add water and mix well, cover and cook on low flame for 1 hour.

Add fried mutton mix boti and mix well, cover and cook on low flame until meat is tender (approx. 1 hour) then cook on high flame until water is reduced.

In a wok, add cooking oil, bay leaves, cumin seeds and mix well.

Add black cardamom, cloves, cinnamon sticks and mix well.

Add ginger garlic paste and mix well.

Add onion and fry until translucent.

Add yogurt and mix well.

Add salt, red chili powder, Kashmiri red chili powder and mix well.

Add turmeric powder, mix well and cook until oil separates (8-10 minutes).

Now add yogurt mixture into cooked Siri paye mixture, mix well and cook for 8-10 minutes.

Add garam masala powder and mix well.

Add water, mix well and cook until desired consistency.

Remove & discard bay leaves and black cardamoms.

Garnish with ginger, green chilies, fresh coriander & serve.
